Tips:
*ask to sample cheese before buying
*bring to room temperature before serving
*store in Tupperware when not being served
*ask if it’s made with cow, sheep, or goat milk. it may change the taste
*know how aged the cheese is as it may drastically affect its taste
*weird farmer’s market cheese may be good so try the strange local stuff
*know if rinds are edible

3 questions for future posts:
1) Is a tupperware really best? I thought putting it in a ziplock baggie and getting the air out would be better. Please advise me as to what is truly best.
2) Also, can you do another post on which rinds are generally edible and which are not?
3) Also, I’d love to read a post about which cheese mold is edible and which is not. My chedder recently got some white mold on it and I cut it off, but later wondered if it was edible.

Cheese (except processed cheese) is best stored wrapped in wax paper or parchment then placed in a partially sealed plastic bag or tupperware container. The idea is to slow the loss of moisture but don’t suffocate the cheese by cutting off all of the oxygen. Specialty cheese shops use a special cheese paper. If you your cheese comes in the special paper re-wrap the cheese in it.
